Chickpea Spaghetti with Vongole
Ingredients:
Chickpea Spaghetti 250g
Olive oil 100ml
Green parsley 50g
Lemon 50ml
Garlic 50g
Vongole 1kg
Salt/Pepper
Preparation Instructions
- Boil the pasta over low heat for 5-6 minutes, uncovered, stirring occasionally;
- Put olive oil in a pan and add the chopped garlic. Let it brown until it acquires a slight golden hue;
- Add the vongole, cover the pan with a lid and cook over high heat for about 3 minutes, until they open;
- The cooked pasta is added to the pan, over the vongole sauce, mixing together with a little water from the one in which the pasta was cooked, to bind the sauce;
- Season with salt and pepper to taste;
- Finally, add finely chopped parsley and a splash of lemon juice.
