Yellow pea fusilli with chorizo and broccoli
Ingredients:
Yellow pea fusilli 250g
Olive oil 100ml
Broccoli 500g
Chorizo 250g
Liquid cream 250 ml
Garlic 50g
Salt/pepper to taste
Preparation Instructions
- Boil the pasta over low heat for 6-7 minutes, uncovered, stirring occasionally;
- Clean the broccoli and boil it in a pot with water and a little baking soda, to keep its vibrant colour;
- When the broccoli is cooked, remove from the water and immediately transfer to a bowl of ice water to preserve its firm texture and beautiful green colour;
- Heat olive oil in a frying pan, then add the chopped garlic;
- After the garlic takes on colour, add the diced chorizo and cook for 2-3 minutes, until it becomes crispy;
- Add broccoli and liquid cream, mixing everything well. Cook for a maximum of 2 more minutes;
- Season with salt and pepper to taste;
- Add the cooked and drained pasta to the pan over the sauce, stirring to coat evenly.
