Red lentil fusilli with eggplant and goat cheese
Ingredients:
Red lentil fusilli 250g
Olive oil 100ml
Eggplant 500g
Goat cheese 250g
Peeled tomatoes 500ml
Sugar 25g
Green basil 25g
White onion
Salt/Pepper
Preparation Instructions
- Boil the pasta for 7-8 minutes, on low heat, without a lid, stirring occasionally;
- In a pan, fry the onion in a little olive oil until golden;
- Add the diced eggplant and cook for about 3 minutes, until the eggplant softens slightly;
- Add the chopped tomatoes, basil leaves and about 2/3 of the goat cheese, letting them melt gently and create a delicious sauce;
- Add the cooked and drained pasta to the pan, tossing well to incorporate all the flavours;
- Season with salt and pepper to taste;
