High Protein Red Lentil and Yellow Pea Pasta with Green Beans and Basil Pesto
Ingredients:
HP red lentil and green pea penne 250g
Green beans 250g
Green basil 50g
Grated parmesan 100g
Salt/Pepper
Olive oil 100ml
Salt/Pepper
Preparation Instructions
- Boil the pasta over low heat for 5-6 minutes, uncovered, stirring occasionally;
- Fry the pine buds in a dry pan until golden and slightly crispy;
- Blanch the green beans for about 3 minutes in boiling water with salt and a little baking soda, then drain.;
- In a deep dish, put the basil leaves, the fried pine buds, half the amount of Parmesan cheese and the olive oil;
- Mix everything with a vertical blender until a homogeneous sauce is obtained;
- The obtained sauce is transferred to a pan, where the green beans, half of the remaining amount of grated Parmesan and the cooked and drained pasta are added;
- Season with salt and pepper to taste;
- Cook all the ingredients together on low heat for another minute, so that the sauce combines well with the pasta;
- Finally, place the pasta on the plate and garnish with grated Parmesan cheese and some toasted pine nuts for added texture and taste. A light and aromatic dish, perfect for a quick and healthy meal!
