Green pea penne with burrata and ripe tomatoes
Ingredients:
Green pea penne 250g
Olive oil 100ml
Green basil 50g
Burrata 200g
Tomatoes 200g
Oregano 20g
Salt/Pepper
Preparation Instructions
- Cook the pasta over low heat for 6-7 minutes, uncovered, stirring occasionally, then drain:
- Cut the tomatoes into slices, sprinkle with olive oil and oregano, season with salt and pepper and put in the oven for about 1 hour, at 130°C, until partially dehydrated;
- Heat olive oil in a pan, add ripe tomatoes, cooked pasta and fresh basil leaves. Cook together for about 2 minutes, just enough to combine the flavours;
- The pasta is placed on a plate, the burrata is placed on top, being cut to release the creamy interior;
- Drizzle with olive oil and garnish with fresh basil leaves. This dish is simple but very tasty, perfect to highlight the delicate flavours of tomatoes and burrata!
